My whole apartment had a super stressful monday soooo we each made a mug dessert of some sort. (brownie, cookie, and cake). I made a single serving vegan samoas #mugcake and i was a little skeptical because i’ve tried really bad recipes, but this one turned out to be amazingggg. so i hadd to share. the texture and girl scout cookie-ness was perfect and it was so moist! Having it be vegan and kind of healthy was justt a plus hahaha. (Taken with Instagram)
Samoas Chocolate Mug Cake (Vegan single serving)
Ingredients:
- 1 tablespoon unsweetened cocoa powder
- 3 tablespoons spelt flour
- 1/8 tsp salt
- 1.5 tbsp sugar (pr evaporated cane juice)
- 1/4 tsp baking powder
- 2-3 tsp coconut oil
- 3 tablespoons milk of choice (I used unsweetened vanilla almond milk from trader joes)
- 1/2 tsp pure vanilla extract
- optional: chocolate chips or caramel topping
Combine dry ingredients and mix very, very well. Add liquid, stir, then transfer to a little coffee mug. Microwave 30-40 seconds. And YAY! homemade healthier mini melts that legitly taste like the girl scout cookie in cake form. Enjoy!

How to cut your carrots julienne…
This carrot cake is a success! Everybody loves it and I do get a lot of compliments when I make it! What they don’t know is that this recipe is very easy and practical - no secrets!
What do you need:
a small amount of softened unsalted butter and flour to grease
3 or 4 medium carrots
4 eggs
2 cups of sugar
1 cup of oil
2 cups of self-raising flour
Preheat the oven to 180°C/350°F/gas 4. Rub a medium size cake tin with butter and flour. Set aside. Peel the carrots and cut in small pieces. Put the pieces on a blender with the eggs and mix for about 2 minutes. Add the sugar and the oil to the mixture and blend once more until smooth.
Sift the flour on a big mixing bowl. Add the blender mixture to the flour and mix it well and gently with a fouer. Put the batter in the prepared cake pan. Bake for about 30 minutes.
For the chocolate topping I combine sugar, milk, cocoa and butter in a saucepan and bring to boil in over low heat, stirring constantly until the mixture has thickened.
